IMG_1750 * The Yamagata region is well known (in Japan) for producing fruit. The mountain slopes are covered with grape producing farms (the kind you eat). A couple of farms have gone into producing wine grapes. * 2592 x 1944 * (1.36MB)
IMG_1751 * We visited the Takahata winery and were able to sample some of their wines. Not bad so we bought a bottle. It is still fairly new. Maybe 10 years old so they don't produce enough for export. * 2592 x 1944 * (837KB)
IMG_1758 * We went to a sake brewing museum. Sake is made from rice and there seemed to be a lot of rice fields around this area as well. This is a portable tea kettle and fireplace (hibachi). You put the coals underneath and water in the side container to brew tea. It's kind of like a Kelly Kettle. * 1944 x 2592 * (724KB)

IMG_1765 * The sake brewing process. 1. polish and wash the rice then let it soak. 2. Cook the rice. 3. let is cool down on mats. 4. Add Kokji microbe to 20% of the rice and put it into a room to stand and allow the starch to turn into an enzyme-sugar. 5. Add Kobo yeast to part of the Koji rice to make Moto base for sake fermentation. 6. Mix Koji rice, Moto base, cooked rice, water. 7. Let it stand for 25 days with regular mixing to allow the rice to ferment. 8. squeeze the mixture in bags in a press to separate the sake from the remaining rice. * 2592 x 1944 * (1.28MB)
